Quiche
10-12 eggs
1/2 cup flour
salt and pepper to taste
1 tsp. baking powder
1/4 cup melted butter
1 lb. cottage cheese
1/2 lb. shredded cheese
1 tomato, chopped
*crumbled bacon
*I always add to this recipe, depending on what I have at hand. In fact, I've never done the same thing twice! I have used chopped asparagus, mushrooms, broccoli, peppers, ham, sausage, etc. just mix it up and experiment.
in a large bowl, beat eggs. add dry ingredients and mix- lumpiness is normal.
add butter and cottage cheese
mix well, then add cheese, tomato and bacon, or other ingredients.
pour into a 9x13 pan. bake at 400 degrees for 14 minutes
turn oven down to 350 degrees and bake for 30 more minutes
I love quiche and it is something that my children will always eat.
What I like about this recipe is that there is no crust...
I know, I know! Crust is a wonderful part of quiche, however,
when trying to eat healthy, it is nice to not have the added calories and carbs.
